Propping up one of Edinburgh’s traditional Victorian tenements in Morrison Street – a three-minute walk from Haymarket Train Station - The Jolly Botanist is a specialist gin bar, the masterpiece of Iain Pert and Gordon Gilhooley, who pooled their hospitality management experience to create a refreshing tonic to the grey urgency of the city streets, garnished with a slice of zesty entrepreneurial vision.

Our team were in high spirits to visit and discover how a modern epos system fits into this steampunk-inspired powerhouse of the Scottish bar scene.

Iain was previously a Director of a larger company and, as part of PG Taverns Scotland, runs six pubs. With a busy life and busy bars (The Jolly Botanist has over eighty gins each with a different tonic and garnish in addition to an extensive food, wine and cocktail menu) Iain needed a system that would make remote management possible and that could cope with this vast variety with ease.

“In The Jolly Botanist we have a wall-mounted terminal …we felt that too many staff were going behind the bar to use the tills when we were serving food…. this gave them the option of being able to ring up food and drinks away from the bar…it’s just a means of not being behind the bar in a congested bar and they can do the job much more efficiently.”

In addition to attracting the crowds, Ian’s business-savvy approach has led to The Jolly Botanist deservedly accumulating a host of industry accolades - The Dram’s 2015 Best Newcomer Award, Best New Pub 2015” at the Licenced Trade Association Award, shortlisted for Best Bar in the UK, Finalist for Scotland’s Best Specialist Bar, Winner at Star Pubs Awards 2015 to name a few.
